Description

The chitarra - guitar in Italian - is typical of the Abruzzo region and is used to make one of the region's most famous pasta shapes, spaghetti alla chitarra. Sheets of pasta are laid across the wires of the chitarra and then pressed through with the rolling pin to make fine strands of spaghetti with a square profile.

Spaghetti alla Chitara are traditionally served with a tomato-based sauce made with lamb, pork and veal.
