Moretti '00' Flour
In Italy, flour is divided into five grades that indicate how fine or coase the flour is. Of these, the finest and silkiest is the '00' grade. A beautiful white flour that yields excellent results in cakes and pastries as well as a tender-crumbed foccaccia (see recipe) and pizzas. '00' flour can also be used in pasta-making to gently temper unyielding and coarse semolina for easier kneading and a silkier texture; of course, it makes a fabulous, luscious bechamel too.
