Description

Eggplant is one of the most used ingredients in regional cooking. You can find it in first courses, side dishes and in delicious preserves. Eggplants are harvested when fully ripe – they must be firm, intact and with a minimum amount of seeds. They are hand-peeled, cut in thin strips, steeped in water with vinegar and salt, seasoned with chilli, mint and garlic and finally preserved in extra virgin olive oil from Puglia.

Serving Suggestions: Serve with antipasto, as a side dish, or as ingredient in salad or panini.
