Vialone Nano is the preferred risotto rice of the Veneto region and has a unique culinary performance for risotto. The flavour is delicately herbaceous and clean. Riserva rice also retains some residual colouration and more wholesome flavours. It requires an extra minute or two in the pan, and will cook within about 15 or 16 minutes. Use this rice with meat and vegetable based risotto.

Description

Ferron Vialone Nano Riserva rice is a thick, short oval-shaped grain which is unpolished. It is also known as Dwarf Vialone, as the word “nano” translates to dwarf and refers to the size of the grain.

Vialone Nano is typically produced in Isola della Scala in the Veneto region of Italy. The cultivation of this species is a masterpiece of Italian rice-growing that takes advantage of the pure spring waters which flow in the canals that stretch across the fertile land of the Veronese valley. The canals are also home to live carp that provide natural pest control eliminating the need for pesticides.

The core starches of the grain can absorb up to twice its own weight while the starches on the exterior create a creamy texture. It has only slightly less amylose than Carnaroli (23.9% for Vialone and 24.1% for Carnaroli). Amylose is the starch which gives rice better structure while cooking. This has made it the preferred rice for risotto by chefs in the Veneto because it will produce the ‘all'onda’ (wavy) texture. Cooking time for Riserva is normally 15 to 16 minutes for ‘al dente’.

Gabriele Ferron releases a small amount of premium Riserva rice each year. He personally selects the grains from a single grower’s crop in the Isola della Scala valley. This exceptional rice is slowly and gently hulled using centrifugal force. This thorough method of husking guarantees complete removal of the bran and germ whilst retaining all the precious starch. Unlike the standard varieties, Riserva rice is not polished. Therefore it retains maximum possible starch, which gives the risotto a naturally creamy texture. 

Ferron rice is organic and there is no use of pesticides or herbicides.  In accordance with traditional farming practices, fields are routinely left fallow.  In non-planting years, corn and medicinal herbs are cultivated to replenish the soil with nutrients.

In 2006, the Vialone Nano rice was designated an IGP (Indicazione Geografica Protetta) certification by the European Government to ensure that only products genuinely originating in this region are allowed to be identified as such in commerce.    

Risotto is a fantastic vehicle for your preferred seasonal vegetables. Although the possibilities are endless, simplicity of ingredients is often critical for success. Porcini mushrooms, truffles, or wild asparagus are classic favourites.
